When I edit a song in iReal Book Editor and I choose a key for that song in the Info tab, and then I send it to the iReal Book in my iPhone, the key that is assigned to the song is always C. The last song I edited in the editor was in F, but in my iPhone it appears assigned in the key of C. What am I doing wrong?

Mac editor, in Info, after setting the key signature, click on the Apply key signature button. The title at the top will tell you the key signature assigned to the song.
Web editor, choose the key, then click on the Set button

More unlikely - it could be that you have set a transposition in iReal book itself in Settings. This would make every song transposed though (so you would have noticed it, unless you are just checking that one song and have not noticed you have global transpose set to a different key.)
