Here's some interesting facts about that song:
- it starts in the key of F and end in a different key (Bb). It's not a key change, it's just the way the song modulates.
The interesting thing is that it just doesn't go back from the key Bb to F at the end of the form. Instead, it switches to the key of Db for the A and B section and then goes back to the original key (F) for the last A & C sections (the form is ABAC). And it resolves at the end in the key of Bb.
So that key change in Db in the middle is not a random key change. It's really part of the song structure.
That makes the transition between the key of Bb and F much more natural and smoother.
If you skip that Db key change, it sounds like starting the song on the dominant chord instead of the tonic chord, kind of like switching to a different song. But with the Db modulation in-between, it still sounds like it's the same song as we can clearly feel the F chord as the tonic chord (and not a dominant chord).
This is very clever songwriting.
I would suggest to play that song the way it was originally written (with the key change in the middle). It just sound better that way in my opinion.
