Keys change when I want to edit a certain tune

Probably because your play mode key is set to something other than the "Default" (the original key when the file was created). Check your settings. When in edit mode, the file always shows the default key. Also, this kind of question belongs in the Discussion Forum (under the version you're using: Android, iOS or OSX) rather than in the Songs Forum.
The editor operates in the chart’s "default" key. You can reset the default key of your chart in the editor on the song information screen (title, composer, style, KEY) change the key, select "set AND transpose". Then you can make edits in your key.

For those with transposing instruments:
the key in song edit is in concert key (which is the key it must be saved in when you use global transpose>transposing instrument, Bb, Eb etc.) but as Bob described, use Set and Transpose - a couple of times (input or edit in your transposing key from your transposed instrument's chart, then Set and Transpose back to concert key before saving).

I often change default key as requested by the band and next time the song starts it comes
up in that new key as it should. However, if someone asked to change a chord on the chart,
as soon as I invoke editing mode (a pencil icon->Edit), the song defaults to original key rather
than becomes editable in current key - very inconvenient.
In order to to edit in the new key I have two awkward options now:
1. If you want to keep default tune, duplicate it, give it a new name, transpose into desired key and save it there;
then the new key becomes default for this copy, so stays put if you edit that tune. You'll end up with two versions.
2. Save your tune in a new desirable key, which makes it default, edit the chart in that new key, save the chart,
change new default key back to original key, and re-save again.
Wouldn't it be just easier to allow editing in whatever key it is presently being displayed (not necessarily default key)?
