Am I missing something?
I don't see this choice in the editing choices.
Please let me know if there's a way to do this.

Enter the chord as you did in the title of your post using the keyboard.
(Chord name instead of the *, then the flat-symbol, then the 9)

b9 Examples - Example

Cb9 is entered on the keyboard the others are from the chord picker (but could also be entered with the keyboard)
